It’s Week #4 of Meal Planning (Fall into Fitness Challenge) and also the first day of the Elf 4 Health Challenge! Today is “Meatless Monday” and our meal plans for this week look a little something like this:
Meal Planning Week #4:
Sunday: Vegan Sheppard’s Pie. It was delish!
Monday: Meatless Monday leftovers: Vegan Sheppard’s Pie or All Things Red Soup.
Tuesday: Sweet Chili.
Wednesday: Salmon, baked sweet potato and veggies.
Thursday: Mini Pizzas.
Friday: Vegan Waffles
Saturday: Hilary’s Birthday PARTY!!! The party is late afternoon so dinner will be health snacks/birthday cake and left overs from this week.
Since my husband is a vegan we have a lot of meatless meals. Sometimes when I want meat with our meal I just make it on the side for me and the girls…it’s easy to do and works for our family. We just had tagliatelle and a Tomato and mascarpone sauce for tea. Meatless and nice!
My husband calls it “tea” too…oh you brits…always making things sounds SO MUCH better 🙂

I think our favorite meatless meals are open faced sammies and healthy side salad. It’s amazing how much veggies can satisfy you!!
Yum! I love getting creative with salads – the veggies, fruit, nuts/legumes you can put in a salad are endless!
