Run, Barre, Yoga and Pumpkins

That pretty much sums up life in the last week. It seems as if running is taking a back seat lately as I just don’t have the interest/drive/motivation to do it.

What’s been going on?

Last week I tried Barre for the first time and had a blast! I had lots of aches and pains in muscles that I didn’t know existed. I even went back this Monday! I’m trying to get back into weekly yoga but missed it yesterday because I was just too busy and needed my lunch hour to get stuff done. That just made me more grumpy which really, no one needs to be grumpy.

Blogging Confession

Honestly, I’ve barely signed in to WordPress all week to write, read or comment on other blogs. This might be the longest I’ve gone without writing a post. Right now, I just seem to have no desire to write and contemplating wrapping up the blog in December. Don’t worry, since I’m grumpy I’m not making any decisions but I’m sure trying to figure why I blog and if I’ll keep it going.

Should we go right or left?

Running, My Ankle & Soccer

I’ve gone on two 9k runs in the last 2 weeks and that’s it. They were a week apart but so different even though I ran the same route. My first run, I loved and seemed to just want to keep running and the second run was horrible from start to finish. Can’t win ’em all!

My ankle is getting better. Both long runs started off with no pain or stiffness so that’s a big win! I’m still in physio which seems to be working. I’m also back to playing indoor soccer each week and loving it!

Yes, I was THAT Mom last week who dragged her kids to her 7 o’clock soccer game which resulted in an a 1.5 hour delayed bed time! I made dinner the day before so that would it be quick and easy and lined up a sitter lined up but it fell through last minute. Luckily another Mom has a teenager coming who loves kids! She took care of the girls while I played. Have you ever been half dressed for work and half for a run/workout? I tend to make dinner and get half ready for soccer: work blouse and soccer shorts for the win! After the game it was home to settle the girls down for bed time.

PUMPKINS!!!!!!!!!

We went a last minute pumpkin picking with my brother’s family on the weekend. Sunshine, a rainbow, cold winds and then a downpour of rain. It was the fastest pumpkin picking I’ve ever done!

Though pumpkin picking was so quick due to the weather it was completely unplanned and so great to see my brother, his wife Jen and my niece Ava. Best part of our weekend for sure!

Fall Eats & Treats for Thanksgiving Dinner

With Thanksgiving coming up this weekend, all I can think about (besides pacing the 10k) is all the yummy food we’ll be eating. Turkey, ham, sour cream potatoes, sweet potato bake, veggies galore and special family recipes that we *hope* the person brings to meal.

My aunt always makes these amazing chocolate coconut {Queen Anne Squares} that are to die for – I’m holding out that she’s making this. I’m on the sweet potato bake (mashed potatoes with peanut butter and maple syrup on top) and of course a few vegan treats!

Last night instead of running *gasp*, don’t worry I went to a great yoga class at lunch time 🙂 Last night I did a little baking…muffins, cookies and pie crusts for the weekend.

Since we went apple picking last weekend we have a bag full of apples to use up: apple pie, apple crisp and I might even make some apple muffins this week too! Since Saï is a vegan, I do all my baking vegan so he can enjoy it. Okay, that’s a lie, I do 90% of my baking vegan.

Some of what I made last night and still to come…..

I’m not sure if I’ll get to the pumpkin pie but I’m pretty sure I’ll be hungry {or should I say “rungry”} after my 10k on Sunday. I’m a few days and a 1 hour drive with the girls and Saï away from Thanksgiving dinner!

Pumpkin Pie {Vegan}

Side note: I’ve added some new Sweat Pink Ambassadors’ blogs to my BLOGROLL – you should check them out 🙂

~~~~~~~~~~~~
Apparently this week is all about food’s that I’ve made over the last month…so I figured I’d continue with the theme 🙂
My first pie was the Vegan Amazing Apple Pie which was my trial run for the “Perfect Pumpkin Pie”. Now, I’m not a big lover of pumpkin pie but I thought I would give it a try.
And yes….it had to be vegan.
Perfect Pumpkin Pie
Ingredients:
1 cup and 1/2 cup of soy milk
egg replacer (to equal 2 eggs)
1 16oz can of pumpkin
1/2 cup sweetener
1 tsp cinnamon
1/2 tsp powdered ginger
1 pie crust
NOTE: this was the easiest pie I think I’ll ever make!
Directions:
  • Preheat oven to 350 degrees F
  • In a large bowl, whisk together the milk and the egg replacer.
  • Add the pumpkin, sweetener, cinnamon, and ginger and mix together well.
  • Pour into a pie crust and bake for 30-40 minutes, until centre is firm
Pie Crust – you can get from my “Amazing Apple Pie” post the other day.
Pumpkin Pie, Muffins and mini pies!
I had a little extra pie crust, so I made some mini pie’s for Lilly.
Then made Vegan Pumpkin Banana Muffins with the left over can of pumpkin.
Eat and enjoy!
{Vegan} Pumpkin Banana Muffins
After I made my second vegan pie (post coming tomorrow), I had plenty of pumpkin left over. I figure I would just put it in my fridge and it would probably go bad 😦 OR I could make something else with it, right then and there.
So, I googled Vegan Pumpkin Muffins and came across “Week Of Menu’s” blog – it’s the only recipe I could find that didn’t call for nutmeg. Not that I don’t like nutmeg, but we didn’t have any in the house.
These. Are. Amazing!
I’ve made them twice since the first batch. These are a MUST TRY!
Vegan Pumpkin Banana Muffins
Vegan Pumpkin Banana Muffins
Makes 12 regular, 24 mini –> I found this recipe made more than the suggested amount.
Ingredients:
1 1/2 cups all-purpose flour
½ cup brown sugar
¼ white sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon salt
1 cup pumpkin puree (can)
2 bananas (riper the better) mashed well
1/3 cup vegetable oil
1/3 cup water
Directions:
  • Preheat oven to 350 degrees F (175 degrees C)
  • Grease 12 muffin cups or line with paper muffin liners.
  • In a large bowl, stir together flour, sugars, baking soda, baking powder, cinnamon, ginger and salt. In a separate bowl, beat together 1 cup pumpkin puree, vegetable oil, mashed bananas and water. Stir pumpkin mixture into flour mixture until smooth. Scoop batter into prepared muffin cups.
    Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
So good…gone so fast.
Give ’em a try.
Fall Bucket List
I’m a big fan of writing to-do lists especially when it comes to workout out (I’m a planner). I’ve blog about it before here, it helps keep me focused and working on my goals.  Recently, while reading Bess Be Fit’s blog, I came across her post on Festively Fall Printables. I came across a Bucket List that Loves of Life shared on her blog.
I decided to take on a fall challenge because working, having a toddler, being married, oh and in my third trimester – I figured I needed to add something else on my plate 🙂
I though it would be a fun way to capture the next few months before baby arrives and blog about each item on the bucket list. We tend to do most of these things but now I’ll be more accountable to trying to get them all done before the snow falls baby arrives.
To get the Printable version – please go Loves of Life link here:  Fall Bucket List from Loves of Life:
This weekend we were planning on apple picking but it’s calling for rain Sat and Sun.
 Look’s like i’ll be adding “puddle jumping” to our buckets list.
