Zoo, Mother’s Day & Running

We are finally having some beautiful spring like weather in Nova Scotia! Actually, on the weekend we had summer like temperatures…shorts and t-shirt weather – it was fantastic! (we still had snow on our lawn until May 6th!)

We had a busy weekend with swimming lessons, the zoo, mother’s day shenanigans and I finished it off with a little treadmill run.

Mother’s Day started off with a little sleep in {actually, I listened to Lilly and Sai make breakfast and hang out – it was cute}. Once Hilary and I got up, we had the most amazing vegan Tiramisu Protein pancakes – all at my husband’s doing. I don’t want to brag but these really were awesome! We gobbled them up!

After our bellies recovered from such a big breakfast (okay, later that afternoon) we did a little biking on our street.

Oh, and I gave up my Fitbit Flex for the week!!!!! More to come on that!

Baked Blueberry Coconut Oatmeal {vegan}

Since we are having a SNOW DAY in Nova Scotia today (yes, even Government offices are closed!) I thought I would make a nice breakfast for our family. I’ve wanted to make this Baked Blueberry Coconut Oatmeal (From Two Peas & Their Pod) dish for a long time. I figured today was going to be the perfect opportunity. Of course, I had to make it vegan for my husband to enjoy with us.

Baked Blueberry Coconut Oatmeal {vegan} 

Ingredients:

  • 2 cups rolled oats
  • 1 cup coconut flakes
  • 1/4 cup of brown sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 cups skim milk {Coconut OR Almond milk}
  • 1 large egg {1 large banana OR 1/4 cup of maple syrup}
  • 3 tbsp spoons coconut oil, melted
  • 1 tsp vanilla extract
  • 1 1/2 cups blueberries

Directions:

  1. Pre-heat oven to 350 F. Grease 8 x 8 baking pan.
  2. Mix oats, coconut flakes, brown sugar, baking powder, salt and cinnamon.
  3. Mix together milk, egg {banana}, melted coconut oil and vanilla.
  4. Place 2/3 of the blueberries on the bottom of the pan.
  5. Pour over the oat mixture evenly over blueberries.
  6. Next, pour the milk mixture over the oats – covering all of them.
  7. Sprinkle remaining blueberries on top.
  8. Bake for 40 minutes until top is golden and oats are set.

Oh, and we made bacon; normal yummy delicious bacon and….vegan bacon. Now we are off to enjoy the day together, stuck in our house and hopefully outside later to enjoy the snow.

November Goals

Okay, so there are only two months left of 2014…how are you going to spend them? Hiding inside while it get’s colder? Thinking about Christmas shopping? Eating lots of good and bad food over the holidays? Then thinking about your New Year’s resolutions?

For some reason I usually start to implement changes in the fall versus January 1st. I don’t know if I want the head start or to try and make it a habit than a resolution in the new year. As of now, I have no thoughts on resolutions or what I want to do in 2015 but I’m sure those thoughts aren’t too far off.

PR Hello November

For now, I will concentrate on my November Goals:

1 – Run. Really, I think this is a given 😉

2 – Try a new workout each week and post it on the blog. Since I kinda suck at at monthly challenges, I figured if I can do a new one each week I wouldn’t get too distracted. We’ll see.

3 – Time with my husband. We’ve got an anniversary coming up, so why not hang out 😉

4 – Take the girls outside. Don’t be afraid to play in the cold weather, bundle up!

5 – Declutter the house. I’m pretty sure this was one of my goals last winter or spring even. I failed at this as my running increased.

6 – Make better meals for my family. I’m tired of the same meals we eat so it’s time to get creative. Oh and by creative I mean start using all the cookbooks in my house, like Oh She Glows, and the million pictures I’ve pinned on Pinterest.

That’s it. Six goals for the month of November.
